Course Profile: VEN 126

The Physical and Chemical Stability of Wine (a.k.a. VEN 126 Wine Stability) course deals with the most important physical, chemical, and enzymatic reactions in juices and wines, together with the theory and principles associated with the adjustment of acidity, fining, stabilization for shipping, and the clarification of wines.  The course provides students with a scientific basis and a quantitative perspective of our understanding of the physical and chemical reactions in wines, other than ethanol and malolactic fermentations.

Professor Weibiao Zhou, the Head of the Department of Food Science and Technology at the National University of Singapore, will be here on Friday, September 22nd. He will give a presentation on “Food Science Landscape and Career Opportunities in Singapore” at noon - 1:30 pm in the Sensory Theater.

FST students win Iron Brew 2023

Congratulations to the 2023 Iron Brew winners! Each year, the students in the practical malting and brewing course at UC Davis formulate a recipe and compete for the Iron Brew title. The winning team includes Food Science and Technology students Sarah Jane Suriano, Asuka Okamoto, Yoon Jung Choi and Zachary Alan Carling. Their English porter was scaled up with the help of Sudwerk Brewing Company and will be released at the Gunrock Pub on campus June 8, and at Sudwerk on June 9.
